Vegetable Egg Scrambles with Pesto Sauce

Ingredients

3 tablespoons extra virgin olive oil
1 medium onion, diced
1 small red bell pepper, diced
1 cup frozen green peas
8 eggs
Salt and pepper
½ cup Basil Pesto Sauce

Directions
Heat a large non-stick skillet over medium heat. Add olive oil, onions and peppers. Cook 6 to 7 minutes, then add peas and cook an additional minute. Whisk eggs with salt and pepper, then add to vegetables. Scramble until desired texture, then stir in pesto sauce. |
